GUIDE TO TEA
If you don’t have a thermometer at hand, use water that has come up to boiling, with bubbles on the surface.
For a stronger cup, use more tea.
Steep for 3 minutes. Do not discard after a single steep as it can be steeped at least 3 times, with deeper tastes discernible in the 2nd steep.
